A Christmas Spectacle

This weekend I visited the lovely neighborhood of Thoroughbred located in Rancho Cucamonga. Known for their elaborate displays during the winter holiday this neighborhood is known quite well around the area. This tradition in the neighborhood of Rancho Cucamonga has had a reputation of being consistent for over two decades and does not show any signs of stopping now, with thousands of people visiting from all over Southern California every weekend. There are many stories as to how this tradition began from stories of two neighbors competing who has the best Christmas decoration, to the city of rancho informing new buyers they have to set up an elaborate display, and some even say Santas workshop is hidden in the hills of Alta Loma. So please I am positive you will not be disappointed with the display. It starts from the 1st week of December and ends on the 24th Christmas Eve.

What You Can Expect to See

You can expect to see lights! Lots and lots of lights! So much that I would not be surprised if all of Rancho Cucamonga's power would be rerouted to here. There is a house for every type of theme from Christmas movies such as The Grinch, and The Nightmare Before Christmas. Other like to support their sports teams all over their decorations and some think outside the box and like to keep the summertime alive during the winter season. How to Get to Thoroughbred

Since I came all the way from Jurupa Valley, I can tell you its worth the drive and the traffic.
There is no specific address to get to Thoroughbred since its a street but this is the address given to google to help you get there. 5485 Sapphire St, Rancho Cucamonga, CA 91701.
But once you get close to Thoroughbred you will notice the big cluster of traffic to get up there.
unfortunately, walk thru traffic will not be allowed starting December 15th. You will only be able to enjoy watching in the comfort of your vehicle. In this video, Deputy Sheriff Jacob Bailey will explain more about these changes.

Museums Located in Riverside California

Whether it’s with a pencil or through a lens, art is something that everyone can find a passion for. So if you find yourself having a dull or hectic day, Riverside supplies you with multiple museums all around the city to spend a couple hours and get in touch with your artistic side. Below you can you find the various options the city has when it comes to creativity and evoking emotions.

Riverside Art Museum

Designed by award-winning architect Julia Morgan, the Riverside Art Museum resides within the 1929 building which had caught the eye of the Riverside Art Center in the 1960’s for its artistic build. The museum also houses many works of art from the famous artist, to even local high school students aspiring to become known for their passion. The RAM exhibit also participates with the many events held in Riverside, including the Festival of Lights, Switch- On Ceremony, where the CBU visual arts assistant professor and students come together and display their illuminated sculpture throughout the event. The Riverside Art walk held at RAM is a monthly occurrence held every first Thursday. There you can experience the local art and culture of Riverside including visual and performing arts. If you are looking to do something with the kids, the RAM also holds a free family-friendly crafts held on the first Sundays of every month.

World Museum of Natural History

Located on the campus of La Sierra University, you could find one of the world’s largest collections of gems and minerals as well as the largest Southeast Asian bird collection in the U.S. on display. With over 90% of known species of crocodilians, which include turtles, tortoises, lizards, and snakes, you will have no problem in discovering species you haven’t had the chance to come across yet because many of the Asian species featured in this museum do not appear in any other U.S. museum. Since the university naturalized over 100 types of trees in its location, it has been officially acknowledged as an arboretum, which is a botanical collection of trees or living collections of woody plants and is intended at least in part for scientific study.

Going along with the historical buildings Riverside has kept up and running, the UCR ARTSblock, is in no way different. Located in a block neighboring Downtown Riverside’s pedestrian mall, you’ll find two reconstructed department stores housing the three museums that came together for this art block. The Museum of Photography is home to UCR’s faculty and student photographs out to showcase for the world to see their keen eye and art. It also displays historic photos to inform the public of the various forms of art and the relationship between traditional expression and contemporary art and to preserving and making accessible its vast holdings of photography and related apparatus. This is an idea that the next museum is trying to bring to the public, the Sweeny Art Gallery is an artistic laboratory trying to show the audience and engage them in the experimentation, modernism, and exploration of art in our time and past as well. The last of three museums in the block is the Barbara and Art Culver Center of the Arts where you could find your moving art. Here they house film programs, musical dances, and even theatrical performances. The Culver Center also holds programs of lectures, symposia, and community forums with artists, filmmakers, playwrights, dancers, and musicians. The main room you could fins yourself in a screening room and cafĂ©. If you make your way up to the second level, you will find a media lab with two dance studious as well a black box with green screen and even recording studio. The widespread art, photography, and research collections these galleries make ARTSblock an significant goal for audiences as well as researchers working in a wide range of fields.

Now that the sun and heat are slowly creeping away, the outdoor activities you’ve been trying to do are now a bit easier. If you find yourself longing to get out into the wilderness or just become a bit more active, we could help you out with that. Whether you are just a beginner or advanced hiker, these trails will be enjoyable to spend some time in with company or for that solo time to take some stress off your shoulders. Below are a few spots around the Riverside and Jurupa area to enjoy. 

When it comes to Riverside and trails, Mount Rubidoux is definitely one for the books. This trail could be easily spotted heading East on the 60 freeway through it’s a giant white cross and American flag waving high above the mountain. The top of the mountain is also a favorite spot due to the oldest outdoor Easter sunrise service in the United States, first held in 1909, and the city’s annual 4th of July fireworks display. If you are looking for a moderate hike, this is a spot to try out where not only will you get a good workout but at the same time, get a beautiful view of the Riverside area and its neighbor cities. The 4 mile hike has multiple entrances depending on how hard of a hike you are looking for. One entrance by the newly constructed park Ryan Bonaminio Park, which is also the ideal place to park to avoid that ticket, would let you experience the full trail the mountain has to offer. If you are looking for a more extreme entrance, you could head west of the mountain and begin the hike by the parking for the Carlson Dog Park up the side of the mountain. 


If you are looking for a simple trail to go for a run or long walks, the Sycamore Canyon Wilderness Park Trail is one for you. Open to the public, the many criss crossed trails it supplies can keep you walking for hours and lets you personalize the path you would like to take. Known for having no shade, this is definitely not for the faint of heart on a sunny day, but it is a nice walk to enjoy some peace and quiet instead of the hustle and bustle of Riverside. Here you’ll also come across some wildlife plants as well as animals such as coyotes, rabbits, snakes, and most definitely lizards. If you are more of a biking type of person, this trail is more of an interest toward that. The many hills and flat trails are ideal for bikers trying to get a good workout in. Keep in mind, it is a shared trail with hikers that prefer to walk. 


Graffiti Waterfall


For a more unique trail to take, you could try out the Graffiti Waterfall’s trail which has both the beauty of art as well as nature. Here you’ll find yourself caught up in the world of graffiti artist risking their limbs to get their mark on these rocks, or even trying to leave their art on scraps of metal found on the floor. If you are looking to escape the city as well as keep a part of it with you, this is the hike for you. You could either choose to take a short cut and climb up the rocks to get to the waterfall, or you could continue down the dusty trail that is just as intriguing. Just be aware that the rocks can be slippery so don’t let the art distract you enough to lose your balance.

Hey, Everyone, It's October 26th and do you know what is celebrated today? Well, don't worry I'm here to help. Join me for a quick holiday update on paying tribute to the men and women serving our country deployed overseas. Also I provide you with some valuable pumpkin recipes to celebrate national pumpkin day.

National Day of the Deployed

Throughout the many years, the U.S. has been the U.S, there has always been those brave men and women who go out and serve our country by defending it. We all know a family member, a friend, a friend of friend, but for certain we have come across someone that has been in the situation of sacrificing their life, or having to leave their family as they go out to keep them safe. Today we come together to take acknowledge of the courage they had and to let them know we are supporting them and waiting for their return. Starting back in 2006 in the state of North Dakota today was just another day till the Governor Hoeven took the idea a local citizen, and began the tradition to honor those who left with a day marked just for them. After 6 years of trying to spread the day to everyone, on October 26th, 2012 all 50 states came together and marked this as being National Day of the Deployed. So if you know anyone waiting for their family member or friend to return, let them know we are here for them by letting the day be in honor for the deployed.


National Pumpkin Day

We all know the pumpkin is a favorable decoration for autumn and for the delicious use of the inside, but did you know today we also celebrate this plant? That is right, today marks the day we commemorate the pumpkin. So what better way to do that, than to head to your local store and buy yourself a pumpkin to carve out with the kids and practice to make some delicious recipes for the upcoming holiday in November? Below you’ll find some recipes to make use of those insides as well as some pumpkin patches in case you want to have that pumpkin picking experience a lot more entertaining.

Sally’s Pumpkin Crumb Cake Muffins

Ingredients:
  • 1 and 3/4 cups (220g) all-purpose flour (spoon & leveled)
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice1
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) canola or vegetable oil
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1 and 1/2 cups (340g) canned pumpkin puree
  • 2 large eggs, at room temperature
  • 1/4 cup (60ml) milk, at room temperature2

Crumb Topping
  • 3/4 cup (94g) all-purpose flour (spoon & leveled)
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) packed light or dark brown sugar
  • 1 teaspoon pumpkin pie spice1
  • 6 Tablespoons (86g) unsalted butter, melted

Directions:
  1. Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. This recipe makes 15 muffins, so prepare a second muffin pan in the same manner. Set aside.
  2. Make the muffins: In a large bowl, whisk the flour, baking soda, cinnamon, pumpkin pie spice, and salt together until combined. Set aside. In a medium bowl, whisk the oil, granulated sugar, brown sugar, pumpkin puree, eggs and milk together until combined. Pour the wet ingredients into the dry ingredients, then fold everything together gently just until combined and no flour pockets remain.
  3. Spoon the batter into liners, filling them almost full.
  4. Make the crumb topping: Whisk the flour, granulated sugar, brown sugar, and pumpkin pie spice together until combined. Stir in the melted butter until crumbs form. Spoon crumbs evenly on top of the batter and gently press them down into the batter so they're snug.
  5. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 21-22 minutes, give or take. Allow the muffins to cool for 10 minutes in the muffin pan as you make the icing. *For mini muffins, bake for 11-13 minutes at 350°F (177°C) or until a toothpick inserted in the center comes out clean.

Aimee’s Pumpkin Pie Smoothie

INGREDIENTS:
  • 1/2 cup pure pumpkin puree
  • 1 large banana
  • 6-8 ice cubes
  • 6 oz vanilla yogurt
  • 1/2 tsp pumpkin pie spice
  • 1 tsp agave nectar (or honey would work too), add more if you like it sweeter
  • 3 Tbsp milk
  • pinch nutmeg and whipped cream, optional garnish
DIRECTIONS:
  1. In a blender (I love this one, it does a great job crushing the ice), combine pumpkin, banana, ice, yogurt, spice, agave nectar and milk. Pulse until smooth!
  2. Pour into a glass and top with whipped cream and pinch of nutmeg. ENJOY!

As we near Halloween more and more options on what to do on your free day are coming up. Here are a few spots to hit up if you are in the mood for a scare or just a fun and family friendly event:

GHOST WALK RIVERSIDE

At the Ghost Walk Riverside you could find 4 different tours, all different in their own way,
where various writers, storytellers, actors, musicians, and vocalists from all over come together
to collaborate. Each one has different level of fear so if you are just looking to entertain the
kids, they got you covered, or if you are looking for a bit more of frightful one them you could
try them all out and get a good spook toward the end. Live entertainment will also be a part of
the walk including UCR’s Taiko Ensemble which is a traditional form of drumming with the large
drums in a group known as kumi-daiko. The event will also have a kid’s carnival with games, and
kid’s Halloween costume contest from ages 10 and below. If you are hungry there will be food
vendors around as well little boutiques to keep you busy.

the edge of murder. As you dive deeper into the maze, you’ll come to the horror of who these
victims were and who will be his next. Due to graphic scenes across the maze, children are
recommended to come with an adult.

National Chocolate Cupcake Day
That’s right chocolate lovers, we have a day dedicated to some delicious treats that we could eat
and celebrate about as well! Here are a few recipes gathered from different food blogs that will
definitely have you to commemorate this day as one your favorites.

Jamielyn Nye’s Best Chocolate Cupcake Ever Recipe
For 20-24 cupcakes:
Ingredients:
 1 box (15 ounce) devils food cake mix
 1 (5.9 ounce) box instant chocolate pudding (dry)
 4 eggs
 3/4 cup canola oil
 3/4 cup hot water
 8 oz sour cream
 1 1/2 cups chocolate chips
Directions:
1. Preheat oven to 325°.
In a large bowl combine the cake mix and chocolate pudding.. Stir until combined. Next mix in
the eggs, canola oil and water. Stir in the sour cream and then chocolate chips.
2. Pour cake mix into the cupcake liners (about 3/4 the way full). Bake for 20-25 minutes or until
they Spring back when touched. Do not overcook. You can also test with a tooth pick to make
sure the centers are cooked all the way through.
3. Remove from oven and allow cupcakes to cool on a cooling rack

As for the top off, you could go ahead and put what frosting you fancy to finish it off.

Ashley’s Ultimate Chocolate Peanut Butter Cupcakes
For 18 cupcakes
Ingredients
For the Chocolate Cupcakes:
 3 tablespoons coconut OR canola oil
 1 stick unsalted butter, melted and slightly cooled
 1/2 cup semi-sweet chocolate chips
 3/4 cup + 2 tablespoons all-purpose flour, not packed
 1/2 teaspoon baking soda
 1 teaspoon baking powder
 1/2 cup unsweetened cocoa powder
 1/2 teaspoon salt
 2 large eggs + 1 large egg yolk, at room temperature
 1 cup granulated sugar
 1 teaspoon vanilla
 1/2 cup full fat sour cream
 1/2 cup hot coffee OR hot water
 18 peanut butter cups (I used the full-sized ones, but think the minis would work, too)
For the Peanut Butter Frosting:
 1 and 1/2 cups creamy peanut butter
 1 cup (2 stick) unsalted butter, very soft
 1 teaspoon vanilla extract
 3 cups confectioners' sugar
 1/4 teaspoon salt
 3-4 tablespoons heavy cream
 9 peanut butter cups, cut in half (I used the full-sized ones, but again, minis could work

Directions:
For the Chocolate Cupcakes:
1. Preheat the oven to 350 degrees (F). Line a 12-cup cupcake/muffin tin with cupcake liners
and lightly spray the liners with non-stick spray (optional but it does help them peel right
off). Set aside.
2. Melt the oil, butter, and chocolate together in the microwave, heating in 30 second
increments, stirring between. *You can also melt the oil, butter, and chocolate over very
low heat on the stove top, but I find the microwave to be much easier. Whisk mixture
completely smooth and set aside to cool.

3. In a medium-sized bowl combine the flour, baking soda, baking powder, cocoa powder, and
salt; stir together until thoroughly combined and set aside.
4. In a large bowl whisk together the eggs, yolk, sugar and vanilla together; beat until smooth.
Add the cooled oil/butter/chocolate mixture and whisk until smooth. Add half of the flour
mixture, then half of the sour cream. Repeat the process until everything is added, and be
sure to mix until JUST combined. Quickly stir in the hot coffee/water. It's important not to
over mix, here! Just stir until evenly combined.
5. Scoop 2 tablespoons of batter into the bottom of each cupcake tin, press a peanut butter
cup into the batter, then top with another 3 tablespoons of batter; each cupcake mold
should be 3/4 full. You will have leftover batter (enough to make another 6 cupcakes).
6. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean. Cool
completely before frosting.
For the Peanut Butter Frosting:
7. Using an electric mixer, beat the peanut butter and butter on medium-speed until
completely smooth. Beat in vanilla. Reduce the speed to low and add in the remaining
ingredients, beating until fully incorporated. Increase speed to medium-high and beat the
frosting for 1-2 minutes, or until light and fluffy.
8. Once the cupcakes are cooled, spread or pipe the frosting on top then press half of a
peanut butter cup on top.

Amy’s Marshmallow Stuffed Chocolate Cupcakes
For 12 cupcakes
Ingredients:
 1¼ cups flour
 ½ cup cocoa powder
 ¾ teaspoon soda
 ¼ teaspoon salt
 1 cup sugar
 1/3 cup vegetable oil
 1 egg
 1 teaspoon vanilla

 ¾ cup buttermilk
 ½ cup semisweet chocolate chips
 (12 large marshmallows)
Directions:
1. Combine dry ingredients.
2. Beat together sugar, oil, egg and vanilla.
3. Whisk in  dry ingredients and buttermilk, alternating, begining and ending with the dry
ingredients. Beat until smooth.
4. Stir in chocolate chips.  Scoop into prepared muffin pan.
5. Bake at 350 for 20-25 minutes or until tops of cupcakes spring back lightly when touched.
6. After cooling 5 minutes spoon or scoop small indent in center of cake and insert large
marshmallow. Marshmallow Stuffed Cupcakes!
